I love a good Trader Joe’s meal hack and if it’s fast, easy and low carb I add it in into my weeknight meal rotation pretty darn quick. I try to eat low carb whenever I can, but complicated, time consuming recipes are not for me. This recipe was adapted from one I found on Pinterest that used whole stuffed portabellos and home cooked sirloin steak to replicate a Philly Cheese steak as keto friendly. All the ingredients come from Trader Joes and can be mixed in the pan you’re using to bake it in. The presentation is a little rough, but it tastes delish.
You will need:
- 2 packs of portobellos (4-5 total)
- 1 box of Beef Sirloin Roast(found in the meat section)
- A container of Garlic Spread Dip softened
- 1 package cream cheese softened
- 1/2 cup of cream
- 1 pepper (I used orange but green/bell works fine)
- 1/2 onion chopped
- 1 cup Quattro Formaggio shredded cheese
- 1 cup shredded cheddar
Preheat oven to 350
Wipe the portobellos with a towel to clean. Slice into long, thin strips and place in a 9×13 pan. Slice the sirloin steak into bite sized strips and add to the pan. Wash, core and slice the pepper and stir into the mushroom mixture. Add chopped onion.
Warm the spread, cream cheese, all of the Quattro Formaggio, and cream in a saucepan whisking until pourable. Pour over the mushroom sirloin mixture and gently mix until the sauce is incorporated. Top with shredded cheddar and bake for approximately 40 minutes until the mushrooms are soft and the cheese has browned. Allow to cool for 5-8 minutes to reduce liquid.
While delicious just on it’s own, it tastes great over mashed cauliflower or even on toast (gasp!)
